Ingredients

1 pound boneless chicken thighs

8 ounces rigatoni pasta

1 bunch asparagus spears

1/2 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons harissa paste

3/4 cup crumbled feta cheese

2 garlic cloves, minced

1 tablespoon lemon juice

1 teaspoon lemon zest

1/4 cup chopped fresh parsley or dill

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a bowl, combine Greek yogurt, olive oil, lemon juice, zest, garlic, salt, and pepper. Add chicken thighs and toss to coat. Let marinate for at least 30 minutes.

2. Preheat oven to 425°F. Trim asparagus ends, drizzle with olive oil, and season with salt and pepper. Roast for 12–15 minutes until crispy-tender.

3. Boil rigatoni in salted water until al dente. Reserve 1/2 cup of pasta water before draining.

4. In a hot skillet, cook marinated chicken until golden brown and cooked through, about 5–6 minutes per side. Let rest, then slice or cube.

5. Blend feta, harissa paste, a touch of olive oil, and a bit of warm pasta water until creamy. Adjust spice level to taste.

6. Toss pasta with a spoonful of harissa cream. Plate with sliced chicken, asparagus, and drizzle more sauce on top.

7. Garnish with chopped parsley or dill and serve warm.

Notes

You can use chicken breast instead of thighs for a leaner version.

Adjust the spice level by adding more or less harissa to suit your preference.
