  • 1 1/2 lb sirloin (or ribeye/tenderloin), cut into 1–1.5 inch cubes
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 12 oz rotini pasta
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup reserved pasta water (as needed)
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp red pepper flakes (optional)

Instructions
 

  • Pat steak cubes dry and season with kosher salt and black pepper.
  • Heat olive oil in a large skillet over medium-high; sear steak 2–3 minutes per side until browned. Transfer to a warm plate.
  • Boil rotini in salted water until al dente; reserve 1/2 cup pasta water and drain.
  • In the same skillet, melt butter; add garlic and cook 30 seconds. Stir in heavy cream and simmer gently 1–2 minutes.
  • Whisk in Parmesan until smooth and creamy.
  • Add drained rotini; toss to coat, loosening with splashes of reserved pasta water until glossy. Season to taste and add optional red pepper flakes.
  • Return any steak juices to the pan. Serve creamy rotini with steak bites and garnish with parsley.

Notes

Cut steak into even cubes and dry well for best sear. Rewarm leftovers gently with a splash of cream or milk to revive the sauce.
