Ingredients
  

  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)
  • 2 cups baby spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil (for drizzling)
  • 1/2 lemon, juiced

Instructions
 

  • In a mixing bowl, combine ground turkey, garlic, onion, parsley, dill, breadcrumbs, egg, salt, and pepper. Mix gently until combined.
  • Shape the mixture into meatballs of equal size.
  • Heat olive oil in a skillet over medium heat and cook the meatballs for 10–12 minutes, turning to brown evenly.
  • Prepare the fresh bowl ingredients: slice cucumber, halve cherry tomatoes, chop red onion, and crumble feta.
  • Arrange spinach in bowls, top with veggies and warm meatballs, drizzle with olive oil and lemon juice, and serve.

Notes

Store the meatballs and veggies separately to keep everything fresh for up to 3 days. For extra moisture, add a teaspoon of olive oil into the turkey mixture.
