  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • extra granulated sugar for rolling

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, combine peanut butter, granulated sugar, brown sugar, and egg. Mix until smooth.
  • Stir in vanilla extract, baking soda, and salt until dough forms.
  • Shape dough into 1-tbsp balls and roll in granulated sugar.
  • Place on baking sheet and press with a fork to create crisscross pattern.
  • Bake for 8–10 minutes, until edges are golden.
  • Cool on baking sheet for 5 minutes, then transfer to wire rack.

Notes

For best results, use room temperature peanut butter.
Do not overbake; cookies continue to set while cooling.
