  • 2 boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 2 cloves garlic, minced
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs (Panko or Italian-style)
  • 2 eggs
  • 1 cup heavy cream
  • 3 tablespoons butter
  • 1 tablespoon Cajun seasoning
  • 8 ounces pasta (rotini or bowtie)
  • 2 cups fresh spinach
  • 1 sheet puff pastry
  • 1 teaspoon red pepper flakes
  • salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Season chicken with garlic powder, salt, and pepper. Dip in beaten eggs, then coat in a mix of parmesan and breadcrumbs. Fry in olive oil until golden brown.
  • In a saucepan, melt butter, add minced garlic, and sauté. Add heavy cream, Cajun seasoning, salt, and pepper. Simmer and stir in parmesan until smooth.
  • Cook pasta according to package instructions. Drain and set aside.
  • Sauté spinach with butter and garlic. Add a splash of cream, red pepper flakes, salt, and pepper.
  • Roll puff pastry, add spinach and cheese, twist, and bake until golden.
  • In bowls, layer pasta, sauce, chicken bites, creamed spinach, and garnish with spinach twists and parsley.

Notes

Cut the chicken evenly so it cooks uniformly and gets perfectly crispy. Let the Alfredo sauce simmer slowly to develop deep, creamy flavor.
