  • 2 large peaches
  • 1 cup fresh blueberries
  • 4 cups mixed greens
  • 1/4 cup feta or goat cheese crumbles
  • 2 tablespoons fresh mint or basil, chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • 1 pinch salt

Instructions
 

  • Cut the peaches in half, remove the pits, and brush lightly with olive oil.
  • Preheat the grill or grill pan to medium heat. Place peaches cut-side down and grill 3–4 minutes until caramelized.
  • Arrange mixed greens on a platter, sprinkle with blueberries.
  • Add grilled peaches, sliced if preferred.
  • Top with feta or goat cheese, mint or basil, and drizzle with balsamic glaze. Serve immediately.

Notes

Use slightly firm peaches for the best grilling results. Add grilled chicken or salmon for a full meal.
