Ingredients
  

  • 4 cups vegetable broth
  • 1 can coconut milk (13.5 oz)
  • 2 tablespoons red curry paste
  • 3 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 packs instant ramen noodles
  • 1 cup firm tofu, cubed and pan-seared
  • 1 cup carrots, julienned
  • 1 cup fresh greens (spinach or bok choy)
  • 1/2 cup scallions, sliced
  • 1/4 cup crushed peanuts
  • 1 whole lime, cut into wedges

Instructions
 

  • In a pot, sauté garlic and ginger in a little oil until fragrant. Add curry paste and cook for 30 seconds to release flavors.
  • Stir in peanut butter and soy sauce, then pour in vegetable broth. Whisk until smooth and simmer for 5 minutes. Add coconut milk and stir.
  • Prepare ramen noodles according to the package instructions. Drain and set aside.
  • Pan-sear tofu until golden. Slice vegetables and greens.
  • Divide noodles into bowls, pour hot peanut broth over, and top with tofu, vegetables, scallions, crushed peanuts, and a squeeze of lime.

Notes

1. Keep noodles separate from the broth if storing to prevent sogginess. 2. Adjust spice by adding more or less curry paste according to your preference.
