  • 2 boneless skinless chicken breasts
  • 1 cup black beans, cooked and drained
  • 1 cup corn kernels, cooked
  • 1 avocado, sliced

  • 2 cups cooked rice
  • 0.33 cup chipotle sauce or crema
  • 1 tbsp olive oil
  • 1 tsp chipotle powder
  • salt and pepper to taste

Instructions
 

  • Season chicken with chipotle powder, salt, pepper, and olive oil. Grill or pan-sear until golden and fully cooked, then chop into bite-sized cubes.
  • Add warm cooked rice to each serving bowl.
  • Layer on black beans, corn, cilantro, and avocado slices.
  • Place the chipotle chicken over the assembled ingredients.
  • Spoon chipotle sauce over the top and enjoy immediately.

Notes

Add avocado and sauce just before serving to keep fresh. Double chipotle spice for a bolder kick.
