Ingredients
  

  • 4 day-old croissants
  • 1 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup simple syrup
  • 1/4 cup sliced almonds
  • 2 tablespoons powdered sugar

Instructions
 

  • Prepare Almond Cream – Beat butter and sugar until creamy, add eggs, then mix in almond flour, vanilla, and almond extract.
  • Make Simple Syrup – Heat equal parts sugar and water until dissolved.
  • Soak Croissants – Brush croissants inside and out with syrup.
  • Fill Croissants – Slice horizontally, fill with almond cream.
  • Top and Bake – Spread almond cream on top, sprinkle sliced almonds, bake at 350°F (175°C) for 15-20 minutes.
  • Dust with Sugar – Cool slightly and finish with powdered sugar.

Notes
