Ingredients

1 lb penne pasta

1.5 lbs boneless skinless chicken thighs or breasts

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons butter

4 cloves garlic, minced

1.5 cups heavy cream

2 cups Velveeta cheese, cubed

1.5 cups shredded mozzarella cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Season chicken with salt, pepper, and olive oil. Grill or pan-sear until cooked through and golden brown. Set aside.

2. Cook penne in salted boiling water until al dente. Drain and reserve 1/4 cup pasta water.

3. In a large skillet, melt butter and sauté minced garlic until fragrant.

4. Pour in heavy cream and stir in Velveeta and mozzarella until fully melted and smooth.

5. Add reserved pasta water if needed to thin the sauce.

6. Toss cooked penne into the sauce and mix to coat.

7. Stir in chopped parsley and adjust seasoning to taste.

Notes

For best texture, shred mozzarella from a block instead of using pre-shredded.
