Ingredients
300g chicken breast or thighs, chopped
1 tablespoon olive oil
1 cup broccoli florets
1 red bell pepper, diced
1 yellow bell pepper, diced
1 carrot, peeled and sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup soy sauce
2 tablespoons brown sugar or honey
1 tablespoon rice vinegar
1 tablespoon cornstarch
2 tablespoons water
2 cups cooked wild rice
Instructions
1. Chop chicken and vegetables, and prepare sauce ingredients.
2. In a small bowl, mix soy sauce, sugar or honey, vinegar, garlic, ginger, cornstarch, and water.
3. Heat oil in a pan and cook the chicken until browned and fully cooked. Remove and set aside.
4. Stir-fry the vegetables in the same pan for 3-5 minutes.
5. Return the chicken to the pan and pour in the teriyaki sauce.
6. Simmer until the sauce thickens and coats the chicken and veggies.
7. Serve hot over cooked wild rice.
Notes
Use low-sodium soy sauce if you’re watching salt intake.
You can double the sauce if you love your stir-fry extra saucy!
