Ingredients
450g ground chicken or turkey
70g sun-dried tomatoes, chopped
80g fresh spinach, chopped and sautéed
100g feta cheese, crumbled
1 small red onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1 large egg
40g breadcrumbs
1 teaspoon salt
1/2 teaspoon black pepper
4 brioche burger buns
80g fresh spinach leaves (for serving)
200ml tzatziki sauce (for topping)
Instructions
1. Sauté the chopped spinach in a little olive oil over medium heat until wilted. Set aside to cool.
2. In a large bowl, mix the ground meat, sun-dried tomatoes, feta, spinach, onion, garlic, herbs, egg, breadcrumbs, salt, and pepper.
3. Form the mixture into 4 to 6 equal patties and place on a parchment-lined tray. Chill for 15–20 minutes.
4. Heat a grill or skillet over medium heat. Cook patties 5–6 minutes per side, until golden brown and cooked through.
5. Toast the brioche buns lightly, then layer with fresh spinach leaves, a burger patty, and a generous spoonful of tzatziki sauce.
6. Serve hot and enjoy with your favorite Mediterranean sides.
Notes
Chill the patties before cooking to help them hold their shape.
