Ingredients
340g pasta (short, like geminelli or rotini)
300g kielbasa sausage, sliced
1 tablespoon olive oil
2 cloves garlic, minced
200g corn (fresh, frozen, or canned)
240ml heavy cream
150g sharp cheddar cheese, shredded
0.5 teaspoon salt
0.25 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Cook pasta according to package directions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add kielbasa slices and cook for 4–5 minutes until browned.
3. Add garlic and corn. Cook for another 2–3 minutes, stirring frequently.
4. Pour in heavy cream and bring to a gentle simmer. Stir in cheddar cheese until fully melted and creamy.
5. Add cooked pasta to the skillet and toss to combine with the sauce.
6. Season with salt and pepper to taste.
7. Garnish with parsley and serve hot.
Notes
For a lighter version, use half-and-half instead of heavy cream and reduce the cheese slightly.
You can swap the corn for bell peppers, peas, or zucchini depending on what you have on hand.
