Ingredients

1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

2 bell peppers, diced

2 tablespoons tomato paste

1 can (14.5 oz) diced tomatoes

4 cups beef broth

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

3/4 cup orzo pasta


Instructions

1. Brown the ground beef in a large pot over medium heat. Drain excess fat.

2. Add chopped onion and garlic, cook until onion becomes translucent.

3. Stir in diced bell peppers and tomato paste. Cook for 2–3 minutes.

4. Pour in diced tomatoes and beef broth. Add Italian seasoning, salt, and pepper. Bring to a boil.

5. Reduce heat to low, simmer for 10 minutes. Stir in orzo and cook another 8–10 minutes until orzo is tender.

6. Taste and adjust seasonings. Serve hot with optional parsley or Parmesan on top.

Notes

If storing leftovers, keep the orzo separate to avoid it soaking up all the broth.

Add red pepper flakes if you want a little kick of heat.
