Ingredients

450g flank steak

250g cherry tomatoes

150g fresh mozzarella balls

1 handful fresh basil leaves

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

3 tablespoons balsamic glaze


Instructions

1. Preheat oven or skillet to medium-high heat. Toss cherry tomatoes with olive oil, salt, and pepper. Roast or sear until blistered and caramelized. Set aside.

2. Season steak with salt and pepper. Heat remaining olive oil in a skillet or grill pan. Sear steak 3–4 minutes per side for medium-rare. Let rest 5 minutes, then slice thinly.
