Ingredients
1.5 lbs boneless skinless chicken breasts
1 cup plain Greek yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
3 garlic cloves minced
1 teaspoon paprika
0.5 teaspoon salt
0.5 teaspoon black pepper
1.5 lbs baby potatoes
0.5 cup crumbled feta cheese
0.5 cup sour cream or Greek yogurt
2 tablespoons fresh dill chopped
1 teaspoon lemon juice
1 garlic clove minced
Salt and pepper to taste
Instructions
1. In a bowl, mix Greek yogurt, garlic, paprika, lemon juice, olive oil, salt, and pepper. Coat chicken breasts and marinate for at least 30 minutes or overnight.
2. Preheat oven to 425°F. Toss baby potatoes with olive oil, salt, pepper, and a sprinkle of dill. Roast for 25–30 minutes, shaking halfway through.
3. Heat a grill or skillet to medium-high. Cook chicken 5–7 minutes per side until golden and fully cooked (165°F internal temp).
4. Mix feta, sour cream or Greek yogurt, dill, garlic, lemon juice, salt, and pepper until creamy. Thin with a little water if needed.
5. Plate chicken with a dollop of dill feta cream. Serve crispy potatoes on the side and garnish with extra dill.
