Ingredients

1 lb chicken breast, diced

1 lb large shrimp, peeled and deveined

12 oz andouille sausage, sliced

1 1/2 cups long grain rice

1 green bell pepper, diced

1 red bell pepper, diced

1 cup celery, diced

1 medium onion, diced

4 cloves garlic, minced

1 can (14.5 oz) crushed tomatoes

3 cups chicken stock

2 tbsp Cajun seasoning

1 tsp paprika

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

2 tbsp fresh parsley, chopped (for garnish)

2 tbsp olive oil (for sautéing)


Instructions

1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned. Remove and set aside.

2. In the same pot, sear sausage slices until slightly crispy. Remove and set aside.

3. Add diced onions, bell peppers, and celery. Sauté until softened, then stir in minced garlic for 1 minute.

4. Add crushed tomatoes, Cajun seasoning, paprika, salt, and pepper. Simmer for 5 minutes.

5. Stir in rice and chicken stock. Return chicken and sausage to the pot. Bring to a boil, then reduce to simmer. Cover and cook for 20–25 minutes.

6. Add shrimp in the last 5–7 minutes of cooking. Simmer until shrimp are pink and cooked through.

7. Garnish with green onions and parsley. Serve hot and enjoy!

Notes

You can increase the Cajun seasoning if you prefer a spicier kick or reduce it for a milder version.

For a thicker texture, uncover the pot during the last 5 minutes of simmering to reduce excess liquid.
