1 vanilla bean, split (or 1 teaspoon vanilla extract)
2 cinnamon sticks
1⁄4 cup brandy (optional)
4 whole cloves (or a pinch of ground cloves)
Ice, as needed for serving
Instructions
1. In a large pitcher, combine pear juice with vanilla bean, cinnamon sticks, and cloves.
2. Let this mixture infuse for at least 1 hour (or overnight in the fridge).
3. Slice pears thinly and add to the pitcher.
4. Pour in brandy (if using), and stir gently.
5. Chill the entire mixture in the fridge for 1–2 hours.
6. Just before serving, pour in the chilled sparkling wine.
7. Add ice to the pitcher or individual glasses.
8. Serve in wide glasses with extra pear slices or a cinnamon stick for garnish.
Notes
Use firm pears like Bosc or Anjou to avoid mushy textures.
Always add the sparkling wine right before serving to preserve the fizz.
