Ingredients

2 lbs chicken pieces (drumsticks, thighs, or breasts)

2 cups buttermilk

2 cups all-purpose flour

1 cup cornstarch

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

0.5 teaspoon cayenne pepper (optional)

2 eggs

Oil for frying (peanut, vegetable, or canola)


Instructions

1. Place chicken pieces in a bowl and cover with buttermilk. Refrigerate for at least 2 hours or overnight.

2. In a dish, mix flour, cornstarch, salt, pepper, garlic powder, onion powder, paprika, and cayenne.

3. Beat eggs in a separate bowl. Remove chicken from buttermilk, dip into flour, then eggs, and again into flour, pressing well.

4. Heat oil to 350°F. Fry chicken in batches for 12-15 minutes until golden and internal temp reaches 165°F.

5. Let rest on wire rack over paper towels before serving.

Notes

Use a thermometer to keep oil at a consistent 350°F.

Let coated chicken rest 10 minutes before frying to help the batter stick better.
