Ingredients

1 lb sea scallops

1 tablespoon olive oil

2 tablespoons unsalted butter

2 cloves garlic minced

1 cup heavy cream

2 teaspoons Cajun seasoning

1 teaspoon paprika

0.5 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon fresh parsley chopped

Instructions

1. Pat the scallops dry with paper towels and season both sides with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add scallops in a single layer and sear for 2–3 minutes per side until golden. Remove and set aside.

4. Reduce heat to medium, melt butter in the skillet, then add minced garlic and sauté for 30 seconds.

5. Stir in Cajun seasoning and paprika, then pour in the heavy cream.

6. Simmer the sauce for 2–3 minutes until slightly thickened.

7. Return scallops to the pan and spoon the sauce over them. Cook for 1 more minute.

8. Garnish with fresh parsley and serve immediately.

Notes

Patting the scallops completely dry before cooking ensures a perfect sear.

Don’t overcrowd the pan; sear in batches if needed for even browning.
