Ingredients

2 pounds russet or Yukon Gold potatoes

1 cup heavy cream

1 cup whole milk

2 garlic cloves, minced

3 tablespoons butter

3 tablespoons all-purpose flour

1 ½ cups shredded cheddar or Gruyère cheese

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme (or ½ tsp dried thyme)


Instructions

1. Peel and thinly slice the potatoes into 1/8-inch rounds.

2. In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant.

3. Stir in flour and whisk for about 1 minute to form a roux.

4. Gradually add milk and cream, whisking to avoid lumps.

5. Cook until sauce thickens. Add salt, pepper, and half of the cheese.

6. Preheat oven to 375°F (190°C) and grease a baking dish.

7. Layer half the potatoes in the dish and pour over half the sauce.

8. Repeat with remaining potatoes and sauce, then top with remaining cheese and thyme.

9. Cover with foil and bake for 30 minutes.

10. Remove foil and bake 25–30 more minutes until golden brown.

11. Let rest for 10–15 minutes before serving.

Notes

Use a mandoline slicer for even, consistent potato slices that cook evenly.
