Ingredients

3 cups cubed pumpkin

2 tablespoons olive oil

1 cup Greek yogurt

1 tablespoon lemon juice

1 teaspoon lemon zest

1 clove garlic, minced

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper

3 tablespoons pine nuts

2 tablespoons chopped fresh parsley or cilantro


Instructions

1. Preheat the oven to 400°F (200°C).

2. Toss the pumpkin cubes with olive oil, salt, and pepper.

3. Spread them on a baking sheet and roast for 25–30 minutes until golden.

4. In a bowl, mix yogurt, lemon juice, zest, garlic, salt, and pepper. Chill.
