Ingredients

1 lb large shrimp, peeled and deveined

1 cup strawberries, diced

2 tablespoons fresh basil, chopped

2 tablespoons red onion, finely chopped

2 cups cooked white rice

2 tablespoons lemon juice

1 teaspoon lemon zest

2 tablespoons olive oil

1 teaspoon honey (or maple syrup)

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon parsley or cilantro, chopped

2 lime wedges (for serving)


Instructions

1. In a bowl, combine olive oil, lemon juice, zest, garlic, parsley, salt, and pepper.

2. Toss shrimp in the marinade and let sit for 15–20 minutes.

3. Dice strawberries, chop basil and red onion, and mix in a bowl.

4. Drizzle honey over salsa, add a pinch of salt, and stir well. Let sit.

5. Heat a grill pan or skillet to medium-high. Cook shrimp 2–3 mins per side until opaque.

6. Fill each bowl with rice, top with shrimp, and add a scoop of salsa.

7. Garnish with herbs and lime wedges.

8. Serve with optional extra drizzle of boiled marinade or balsamic glaze.
