Ingredients

2 cups shredded rotisserie chicken

8 oz sliced mushrooms

2 cups fresh spinach

2 stalks celery, diced

1 small yellow onion, diced

3 cloves garlic, minced

4 cups chicken broth

3/4 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon black pepper

Salt to taste


Instructions

1. In a large pot, heat olive oil over medium heat. Add diced onion and celery. Cook for 4–5 minutes until softened.

2. Stir in the minced garlic and cook for another minute until fragrant.

3. Add the sliced mushrooms. Cook undisturbed for a few minutes to brown, then stir and cook until soft.

4. Pour in the chicken broth and bring to a simmer. Add shredded chicken and dried thyme. Simmer for 10 minutes.

5. Stir in spinach and heavy cream. Cook for another 5–7 minutes until spinach wilts. Season with salt and pepper to taste.

6. Serve hot, optionally topped with fresh herbs or more pepper. Enjoy with bread or a salad.

Notes

For a dairy-free version, use canned coconut milk or a plant-based cream alternative.

If freezing, omit cream and add it in after reheating for the best texture.
