Ingredients

2 chicken breasts

10 oz rigatoni pasta

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian herb blend

1/4 teaspoon red pepper flakes optional

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.

2. Season chicken with Cajun spices, salt, and pepper. Sear in olive oil until golden and cooked through. Let rest, then slice.

3. In a skillet, melt butter and sauté garlic until fragrant.

4. Add cream and simmer, then stir in mozzarella, Parmesan, and Italian herbs.

5. Let sauce simmer until melted and smooth.

6. Toss cooked rigatoni into the sauce, adding pasta water as needed.

7. Adjust seasoning to taste.

8. Serve pasta topped with sliced Cajun chicken. Garnish with herbs if desired.

Notes

Use penne or shells if you don’t have rigatoni.
