Ingredients

170 g corned beef, finely chopped

150 g Swiss cheese, shredded

120 g sauerkraut, drained and chopped

85 g cream cheese, softened

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

100 g rye breadcrumbs or crushed rye crackers

2 large eggs

60 g all-purpose flour

100 g regular breadcrumbs

Vegetable oil for frying

For the sauce:

120 g mayonnaise

60 g ketchup

1 tablespoon sweet relish

1 teaspoon hot sauce (adjust to taste)

1/2 teaspoon smoked paprika


Instructions

1. In a large bowl, mix corned beef, Swiss cheese, sauerkraut, cream cheese, Dijon mustard, garlic powder, and onion powder until well combined.

2. Cover and refrigerate the mixture for at least 1 hour to firm up.

3. Roll the mixture into 1.5-inch balls and place them on a parchment-lined baking tray.

4. Prepare three bowls for dredging: one with flour, one with beaten eggs, and one with regular breadcrumbs.

5. Coat each ball in flour, then egg, and finally breadcrumbs.

6. Heat oil to 350°F (175°C) and fry the balls in batches for 2–3 minutes until golden brown.

7. For the sauce, mix mayonnaise, ketchup, relish, hot sauce, and smoked paprika until smooth.

8. Serve the hot Reuben Balls with the spicy Thousand Island dipping sauce.

Notes

Make sure to fully drain and chop the sauerkraut to prevent soggy filling.

These freeze well! Shape and freeze the balls, then fry directly from frozen (adding 1–2 minutes to fry time).
