Ingredients
1 cup unsalted butter, softened
0.75 cup powdered sugar (plus more for coating)
1 teaspoon vanilla extract
0.5 teaspoon almond extract
1.75 cups all-purpose flour
0.5 cup almond flour
0.25 teaspoon salt
24 fresh raspberries (about 1 raspberry per cookie)
Instructions
1. Cream the butter and powdered sugar together until light and fluffy.
2. Mix in vanilla and almond extracts.
3. Gradually add in all-purpose flour, almond flour, and salt until a soft dough forms.
4. Scoop about 1 tablespoon of dough, flatten it, and place one raspberry in the center.
5. Gently seal the dough around the raspberry and roll into a smooth ball.
6. Place on a lined baking sheet and chill in the refrigerator for 30 minutes.
7. Preheat oven to 350°F (175°C) and bake for 14–16 minutes until bottoms are lightly golden.
8. While still warm, roll cookies in powdered sugar.
9. Let cool, then roll again in powdered sugar before serving.
Notes
Make sure raspberries are dry before using them to avoid excess moisture in the dough.
Roll the cookies in powdered sugar twice for a thicker, snow-like coating.
