1/3 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon cornstarch
4 ounces cream cheese
10 to 12 egg roll wrappers
Oil for frying
Powdered sugar for dusting
Caramel sauce for drizzling (optional)
Instructions
1. In a saucepan, combine diced peaches, brown sugar, cinnamon, and cornstarch. Cook over medium heat until thickened. Let cool.
2. In a bowl, beat cream cheese until smooth. Add 1 teaspoon sugar if desired for extra sweetness.
3. Lay out egg roll wrappers. Add cream cheese and peach filling. Roll tightly, sealing edges with water.
4. Heat oil to 350°F. Fry egg rolls for 2–3 minutes per side until golden. Drain on paper towels.
5. Dust with powdered sugar and drizzle with caramel sauce. Serve warm.
Notes
Make sure the filling is cool before assembling to avoid soggy wrappers.
Use a thermometer to keep the oil at 350°F for evenly crisped egg rolls.
