Ingredients

3 large russet potatoes

3 tablespoons olive oil

2 cloves garlic, minced (or 1 teaspoon garlic powder)

½ cup grated Parmesan cheese

1 teaspoon dried Italian herbs

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley or rosemary, chopped (optional)


Instructions

1. Wash and scrub the potatoes thoroughly. Cut into 6 to 8 wedges each.

2. Pat the wedges dry with a clean towel.

3. In a large bowl, mix olive oil, garlic, Italian herbs, salt, and pepper.

4. Add the potato wedges and toss to coat.

5. Sprinkle half of the Parmesan cheese and toss again.

6. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

7. Arrange wedges in a single layer, skin-side down.

8. Top with remaining Parmesan cheese.

9. Bake for 35–40 minutes, flipping once halfway through.

10. Garnish with chopped parsley or rosemary and serve hot.

Notes

Flip the wedges halfway through baking to ensure even crispiness.

For extra golden edges, broil for the last 2 minutes but watch closely to prevent burning.
