Ingredients

1 cup unsalted butter

1 cup brown sugar

2 tablespoons corn syrup

1 loaf brioche or challah bread, sliced thick

5 large eggs

1 1/2 cups half-and-half

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

1. Melt the butter, brown sugar, and corn syrup in a saucepan. Stir until smooth.

2. Pour the mixture into the bottom of a greased baking dish.

3. Arrange the bread slices snugly on top of the caramel mixture.

4. In a bowl, whisk together eggs, half-and-half, vanilla, and salt.

5. Pour the custard mixture evenly over the bread.

6. Press the bread down gently to ensure it’s fully soaked.

7. Cover and refrigerate overnight.

8. The next morning, bake at 350°F for 35-40 minutes until golden and puffed.

9. Let cool slightly before serving to thicken the caramel.

Notes

Day-old brioche or challah works best—it soaks up more custard without falling apart.

If you want extra crispiness, slightly toast the bread slices before assembling.
