Ingredients

500g chicken breast or thigh (boneless, skinless)

600g baby potatoes (red or gold)

3 tablespoons olive oil

4 cloves garlic (minced)

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon salt

1 teaspoon black pepper

0.5 cup Parmesan cheese (grated)

2 tablespoons parsley (fresh, chopped)


Instructions

1. Preheat oven to 400°F (200°C). Cut baby potatoes into halves or quarters. Dice chicken into bite-sized chunks. Mince garlic and chop parsley.

2. In a bowl, toss chicken and potatoes with olive oil, Cajun seasoning, paprika, garlic, salt, and pepper until well coated.

3. Spread evenly on a large sheet pan lined with parchment paper.

4. Roast for 25–30 minutes, flipping halfway through, until chicken is cooked and potatoes are golden.

5. In the last 5 minutes, sprinkle Parmesan over the top and return to oven until melted.

6. Remove from oven, garnish with fresh parsley, and serve hot.

Notes

For crispier potatoes, place them cut-side down on the pan.

Add extra Parmesan and parsley just before serving for a fresher finish.
