Ingredients

2 large boneless skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

3 cloves garlic, minced

2 cups heavy cream

1 cup freshly grated Parmesan cheese

3 cups penne pasta, uncooked

2 cups chicken broth

2 cups broccoli florets

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the chicken dry and season both sides with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large pot over medium-high heat. Sear chicken until golden and cooked through, about 5-6 minutes per side. Remove and set aside.

3. In the same pot, sauté minced garlic for 1-2 minutes.

4. Pour in chicken broth and heavy cream. Stir and bring to a simmer.

5. Add uncooked penne pasta. Cover and simmer for 10-12 minutes, stirring occasionally.

6. In the last 5 minutes, stir in broccoli florets and cook until crisp-tender.

7. Add Parmesan cheese and stir until the sauce thickens.

8. Slice the chicken and return to the pot or plate on top.

9. Garnish with fresh parsley and serve hot.

Notes

For a thicker sauce, let it simmer uncovered for an extra 2-3 minutes after adding cheese.

Use freshly grated Parmesan for best melting and flavor.
