3 cups beef broth
1 can (15 oz) dark red kidney beans, drained and rinsed
1 can (15 oz) cannellini beans, drained and rinsed
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup ditalini pasta, uncooked
2 tablespoons chopped fresh parsley (optional, for garnish)
Grated Parmesan cheese (optional, for serving)
Instructions
1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
2. Add onions, carrots, and celery. Sauté for 5-7 minutes until softened. Add garlic and cook for another minute.
3. Pour in diced tomatoes, tomato sauce, and beef broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
4. Stir in kidney beans and cannellini beans. Simmer for 20-25 minutes.
5. While soup simmers, cook ditalini pasta in a separate pot according to package directions. Drain and set aside.
