Ingredients
4 salmon fillets, center-cut, skinless
2 cups fresh spinach
1/2 cup sun-dried tomatoes, chopped
1/3 cup feta cheese, crumbled
2 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Sauté garlic for 1 minute.

3. Slice a pocket into the side of each salmon fillet, being careful not to cut through.
