Ingredients
1 pound large shrimp, peeled and deveined
8 ounces fettuccine pasta
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
1⁄2 cup sun-dried tomatoes, chopped
1⁄2 teaspoon crushed red pepper flakes
1⁄2 cup chicken broth
1⁄2 teaspoon salt
1⁄2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Season shrimp with salt and pepper. Heat butter and olive oil in a large skillet over medium heat. Add shrimp and cook until pink and opaque, about 2–3 minutes per side. Remove and set aside.
2. In the same skillet, sauté garlic for 30 seconds until fragrant. Stir in sun-dried tomatoes and red pepper flakes.
3. Add chicken broth and bring to a simmer. Reduce heat and stir in heavy cream and parmesan cheese. Whisk until smooth.
4. Meanwhile, cook fettuccine in salted water until al dente. Drain and set aside.
5. Return shrimp to the skillet. Add cooked pasta and toss until evenly coated in the sauce. Let simmer 1–2 minutes.
6. Garnish with chopped parsley and more parmesan, if desired. Serve immediately.
Notes
For extra creaminess, reserve 1⁄4 cup pasta water to thin the sauce if needed.
