Ingredients

2 cups cooked shredded chicken

2 cups cooked white rice

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 and 1/2 cups shredded cheddar cheese, divided

1/2 cup chopped onion

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped green onions (optional, for garnish)


Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

2. In a large bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, chopped onion, salt, and pepper.

3. Stir in 3/4 cup of the shredded cheddar cheese.

4. Spread the mixture evenly in the prepared baking dish.

5. Sprinkle the remaining 3/4 cup of cheese over the top.

6. Bake uncovered for 25–30 minutes, until hot and bubbly and the cheese on top is golden.

7. Remove from oven and let sit for 5 minutes.

8. Garnish with chopped green onions if desired and serve warm.

Notes

For extra flavor, try adding a teaspoon of garlic powder or a dash of paprika into the mix before baking.

You can use rotisserie chicken to save time and add even more flavor.
