Ingredients

6 cups crumbled day-old cornbread

1 cup diced celery

1 cup chopped onion

1/2 cup butter

2 and 1/2 cups chicken broth

2 large eggs, beaten

1 and 1/2 teaspoons poultry seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 can cream of chicken soup (optional)

2 tablespoons chopped fresh parsley or sage (optional)


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Melt butter in a skillet over medium heat. Add celery and onion. Sauté for 8–10 minutes until soft.

3. In a large bowl, crumble the cornbread. Add sautéed vegetables, poultry seasoning, salt, and pepper.

4. Stir in beaten eggs and gradually mix in the chicken broth until moist but not soggy.

5. Optional: Mix in cream of chicken soup for added creaminess and herbs for extra flavor.

6. Pour mixture into prepared baking dish and smooth the top.

7. Bake uncovered for 35–45 minutes, until golden on top and set in the center.

8. Let rest for 5 minutes before serving. Serve warm with gravy or as a standalone side.

Notes

Day-old cornbread works best because it absorbs the broth without turning mushy.

If your dressing looks dry before baking, drizzle in more broth a few tablespoons at a time.
