Ingredients

2 chicken breasts

8 oz linguine pasta

4 oz pancetta

3 garlic cloves, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 tablespoon butter

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Season chicken breasts with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and fully cooked. Set aside.

2. Add pancetta to the same pan and cook until crisp. Remove and set aside, leaving the rendered fat.

3. Reduce heat and sauté garlic until fragrant. Stir in chicken broth and heavy cream, simmer gently.

4. Whisk in Parmesan cheese until sauce is smooth and slightly thickened.

5. Cook linguine in salted water until al dente. Reserve 1/2 cup pasta water and drain the rest.

6. Return chicken and pancetta to the pan. Add linguine and toss to coat in sauce. Add pasta water as needed to adjust consistency.

7. Garnish with parsley and extra Parmesan. Serve warm.

Notes

For added flavor, deglaze the pan with a splash of white wine before adding cream.

Don’t overcook the pasta—keep it al dente so it holds up in the sauce.
