Ingredients

1 cup all-purpose flour

1 cup granulated sugar

0.5 cup unsweetened cocoa powder

1 teaspoon baking soda

0.5 teaspoon salt

1 cup Guinness Draught beer

0.5 cup unsalted butter

0.5 cup sour cream

1 large egg

1 teaspoon vanilla extract

1 cup unsalted butter

3 cups powdered sugar

3 tablespoons Irish cream liqueur


Instructions

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.

2. In a saucepan over medium heat, combine Guinness and butter until melted. Whisk in cocoa powder and set aside to cool.

3. In a large bowl, whisk together flour, sugar, baking soda, and salt.

4. In another bowl, mix sour cream, egg, and vanilla. Stir in the cooled Guinness mixture.

5. Combine wet and dry ingredients. Stir until just mixed.

6. Fill cupcake liners 3/4 full and bake for 17–20 minutes or until a toothpick comes out clean. Cool completely.

7. For frosting: Beat butter until creamy, then gradually add powdered sugar. Mix in Irish cream and beat until fluffy.

8. Frost the cooled cupcakes and enjoy!

Notes

Make sure the Guinness mixture is cool before adding it to the eggs to prevent scrambling.

For a non-alcoholic version, substitute coffee for Guinness and milk with a splash of vanilla for the Irish cream.
