Ingredients

1 tablespoon olive oil

2 medium sweet potatoes, peeled and cubed

250 grams ground beef (about 1/2 pound)

2 cups fresh spinach or baby greens

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper to taste

1/2 cup Greek yogurt or sour cream

1 small jalapeño, sliced (optional)

1 tablespoon chopped parsley or cilantro


Instructions

1. Preheat your oven to 400°F (200°C). Toss sweet potato cubes with half the olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.

2. In a skillet, heat the remaining olive oil over medium heat. Add ground beef, breaking it apart. Cook until browned and cooked through. Add paprika, garlic powder, cumin, salt, and pepper. Stir well.

3. Rinse and pat dry your spinach or greens. Set aside or lightly toss with olive oil and lemon juice for flavor.

4. Assemble the bowl by layering roasted sweet potatoes, ground beef, and greens.

5. Top with Greek yogurt or sour cream, sliced jalapeño, and chopped parsley or cilantro. Serve warm.
