Ingredients

500g chicken thighs

150g plain yogurt

2 garlic cloves, grated

1 tablespoon grated ginger

1 tablespoon garam masala

1 teaspoon turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon chili powder

200g tomato puree

100ml heavy cream

2 tablespoons butter

Fresh cilantro for garnish


Instructions

1. In a bowl, mix yogurt, garlic, ginger, garam masala, turmeric, cumin, coriander, and chili powder. Add chicken thighs and marinate for at least 1 hour or overnight.

2. Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken until browned on all sides. It doesn’t need to be fully cooked through.

3. In a large saucepan, melt butter. Sauté garlic and ginger until fragrant. Add tomato puree and the remaining spices. Let it simmer for a few minutes.

4. Add the chicken to the sauce and simmer for 15-20 minutes until the chicken is fully cooked and tender.

5. Stir in the heavy cream and simmer for a few more minutes until the sauce is smooth and creamy.

6. Garnish with fresh cilantro and serve with rice or naan.

Notes

For a spicier version, add an extra pinch of cayenne or use hot paprika.

Marinating the chicken overnight gives the deepest flavor.
