Ingredients

1 pound boneless skinless chicken breasts

12 ounces penne or rotini pasta

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic minced

1 cup heavy cream

1 cup freshly grated parmesan cheese

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes optional

2 tablespoons chopped fresh parsley


Instructions

1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden and fully cooked. Remove and set aside.

2. Boil pasta in salted water until al dente. Drain and reserve ½ cup of the pasta water.

3. In the same skillet, melt butter and sauté garlic until fragrant. Pour in heavy cream and bring to a simmer.

4. Stir in parmesan cheese until melted and the sauce is smooth. Add red pepper flakes if using.

5. Return chicken and pasta to the skillet. Toss to coat in the sauce. Add a splash of reserved pasta water if needed to loosen the sauce.

6. Garnish with chopped parsley and additional parmesan before serving. Enjoy warm.

Notes

For extra creaminess, add a bit more parmesan or a splash of milk before serving.

If the sauce thickens too much while sitting, stir in a little pasta water or cream to bring it back to life.
