Ingredients
1.5 lb boneless skinless chicken thighs
3 cloves garlic, minced
1 cup grated parmesan cheese
1 cup heavy cream
1/3 cup sun-dried tomatoes, chopped
1 tbsp Cajun seasoning
1 bunch broccolini
2 tbsp olive oil
2 tbsp unsalted butter
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp chopped fresh parsley
Instructions
1. Cut chicken into bite-sized pieces. Season with salt, pepper, and Cajun seasoning.
2. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove and set aside.
3. Toss broccolini with olive oil, salt, and pepper. Roast at 425°F for 12–15 minutes until edges are charred.
4. In the same skillet, melt butter and sauté garlic until fragrant.
5. Stir in sun-dried tomatoes, then pour in heavy cream and let simmer.
6. Add parmesan and remaining Cajun seasoning. Stir until smooth and thickened.
7. Return chicken to the pan and coat with the Alfredo sauce. Simmer 2 minutes.
8. Plate chicken with sauce and charred broccolini.
9. Garnish with parsley, extra parmesan, and red pepper flakes if desired.
