Ingredients

1.5 pounds boneless skinless chicken breasts or thighs

1.5 pounds baby potatoes, halved

2 tablespoons olive oil

4 garlic cloves, minced

0.5 cup grated parmesan cheese

1.5 teaspoons Italian seasoning

0.5 teaspoon salt

0.5 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Cut the chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.

2. In a large oven-safe skillet, heat olive oil over medium-high heat.

3. Add chicken and cook until golden and fully cooked through. Remove and set aside.

4. In the same skillet, add a bit more olive oil if needed, then toss in the halved potatoes.

5. Season the potatoes and cook until they start browning.

6. Transfer skillet to a preheated 400°F oven and roast potatoes for 15–20 minutes until tender.

7. Return cooked chicken to the skillet with the potatoes.

8. Sprinkle minced garlic and grated parmesan evenly over the top.

9. Place skillet back in oven for 5–7 minutes until the cheese is melted and bubbly.

10. Garnish with chopped parsley and serve hot.

Notes

For crispier potatoes, don’t overcrowd the skillet when roasting.
