Ingredients

1 pound sirloin steak, cut into cubes

2 tablespoons olive oil

4 tablespoons unsalted butter

4 garlic cloves, minced

8 ounces rigatoni pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Cut the sirloin steak into bite-sized cubes. Pat dry and season with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear the steak cubes for 2–3 minutes per side until browned.

3. Add butter and minced garlic to the skillet and baste the steak with garlic butter. Remove from heat and set aside.

4. Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.

5. In the same skillet, pour in heavy cream and stir in Parmesan cheese and reserved pasta water. Simmer until slightly thickened.

6. Add the cooked pasta to the sauce and stir to coat evenly.

7. Serve the creamy pasta with garlic butter steak on the side or mixed in.

8. Garnish with chopped parsley and extra Parmesan if desired.

Notes

Let the steak rest for a few minutes before serving to retain its juices.

Freshly grated Parmesan melts better and gives a more flavorful sauce than pre-shredded varieties.
