Ingredients

1.5 lb steak (sirloin or ribeye)

1 tsp salt

0.5 tsp black pepper

3 cloves garlic, minced

3 tbsp butter

1 tbsp olive oil

12 oz linguine pasta

1.5 cups heavy cream

0.5 cup shredded mozzarella cheese

0.5 cup grated Parmesan cheese

0.5 cup shredded Fontina cheese

0.25 cup crumbled Gorgonzola cheese

2 tbsp chopped fresh parsley


Instructions

1. Pat steak dry and cut into bite-sized cubes. Season with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear steak cubes for 2–3 minutes per side until browned. Remove and set aside.

3. In the same pan, reduce heat. Add butter and garlic, cooking until fragrant (1 minute). Return steak and toss to coat. Set aside.

4. Cook linguine in salted boiling water according to package instructions. Drain and set aside.

5. In a saucepan, heat heavy cream until simmering. Stir in mozzarella, Parmesan, Fontina, and Gorgonzola. Mix until smooth.

6. Combine the pasta with the cheese sauce, tossing until well coated.

7. Serve pasta with garlic butter steak on the side or on top. Garnish with parsley.

Notes

Use a hot pan and dry steak for the perfect sear.

Reheat leftovers gently with a splash of cream to keep pasta sauce creamy.
