Ingredients

1 lb steak (sirloin or ribeye), cut into bite-sized cubes

1 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

8 oz shell pasta

1 cup white cheddar cheese, shredded

1 cup heavy cream

1 chipotle pepper in adobo, minced

1 tsp salt

1/2 tsp black pepper


Instructions

1. Cut steak into bite-sized cubes.

2. Heat olive oil in a skillet over high heat.

3. Add steak in batches, searing 2–3 minutes per side. Remove and set aside.

4. Reduce heat to medium and melt butter in the skillet.

5. Add minced garlic, cook for 1 minute until fragrant.

6. Return steak to pan, toss to coat in garlic butter. Set aside.

7. Cook pasta in salted water according to package. Drain.

8. In a saucepan, bring heavy cream to a simmer.

9. Stir in shredded cheddar until melted.

10. Mix in chipotle pepper and adjust spice to taste.

11. Toss pasta with chipotle cheese sauce.

12. Serve with garlic butter steak bites on the side or mixed in.

Notes

Don’t overcrowd the pan when searing steak or it won’t brown properly.

Add a splash of cream to reheat pasta leftovers to keep it creamy.
