Ingredients
500g baby potatoes
2 tablespoons unsalted butter
1 tablespoon olive oil
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon dried thyme or Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Wash and halve the baby potatoes.
2. Parboil the potatoes in salted water for 5-7 minutes until just tender.
3. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
4. Place potatoes cut-side down and cook undisturbed for 5-7 minutes until golden brown.
5. Add the remaining butter and minced garlic; stir gently to coat.
6. Cook for another 2-3 minutes until garlic is fragrant and slightly golden.
7. Turn off the heat and sprinkle in chopped parsley, salt, pepper, and dried herbs.
8. Serve immediately for best flavor and texture.
Notes
Don’t skip parboiling—it ensures the inside stays tender while the outside crisps perfectly.
For extra crispiness, don’t overcrowd the pan; cook in batches if necessary.
