Ingredients

1 pound chicken breasts or thighs, boneless and skinless

12 ounces rigatoni pasta

3 tablespoons butter

4 garlic cloves, minced

1 cup Parmesan cheese, grated

1 cup chicken broth

1/2 cup heavy cream (optional)

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden and fully cooked. Remove and set aside.

2. Boil rigatoni in salted water until al dente. Reserve 1 cup of pasta water, then drain.

3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and reserved pasta water to create the sauce.

4. Slice cooked chicken and return to skillet. Add drained pasta and Parmesan. Stir to coat. Add cream if using.

5. Adjust seasoning, garnish with extra Parmesan or herbs, and serve hot.
