Ingredients

3 cups frozen hash browns (thawed)

1 cup sour cream

1 can cream of chicken soup (10.5 oz)

2 cups shredded sharp cheddar cheese

4 tablespoons unsalted butter (melted)

2 large yellow onions (thinly sliced)

1 teaspoon salt

0.5 teaspoon black pepper

0.5 teaspoon garlic powder (optional)

Instructions

1. Thinly slice the onions and sautée them in a pan over medium-low heat with 2 tablespoons of butter until caramelized, about 25–30 minutes. Set aside.

2. In a large bowl, mix the hash browns, sour cream, cream of chicken soup, shredded cheese, melted butter, salt, pepper, and garlic powder (if using).

3. Spread the mixture into a greased 9×13-inch baking dish and smooth out the top.

4. Bake uncovered at 350°F (175°C) for 40–45 minutes, until bubbly and slightly golden on top.

5. In the final 10 minutes of baking, scatter the caramelized onions over the top and return to oven.

6. Let cool for 5 minutes before serving.

Notes

For best texture, thaw and drain hash browns before mixing to prevent excess moisture.

If making ahead, assemble without the onion topping and refrigerate up to 24 hours before baking.
